Craving a classic from my home state, I decided to “cook” last night and made queso Texas style. Those of you who’ve never had this could be put off by the Velveeta(it only looks like plastic) but take my word for it, this is a delicious treat. If you prefer a little more heat, use the Ro*Tel Extra Spicy with the added kick of habanero peppers.
Take a one pound block of the best pasteurized processed cheese food that money can buy and dice into one inch cubes. Place in 1 1/2 quart microwave proof bowl.

Pour a ten ounce can of Ro*Tel Tomatoes and Green Chiles over the diced Velveeta. Microwave mixture for five minutes on high. Stir thoroughly and microwave for three more minutes or until all Velveeta is melted. Enjoy with tortilla chips of your choice but if you want a suggestion, I highly recommend Tostitos with a Hint of Lime.

thanks! i just had to set it all up. wordpress is the software and the design layout is just an available template. the hard part was choosing a template from the dozens available and then sorting out how to handle the photos.

Cousin-thanks for making me hanker for the deliciousness that is the Rotel dip. If you really want to jazz it up (company’s coming), add a can of your fave chili! Y-U-M! Here’s my fave quilty pleasure micro-meal. Take a bowl, put in some refried beans, put some cheese on top, put some salsa on top. Nuke it-stirring every so often until it’s a homogenous, delicious, squishy mess. Eat with chips (El Milagro is my brand of choice)-sounds like lunch to me!
